On October 27, 2010 we had a catering job at the Humboldy County Office of Education. We prepared chicken caesar wraps, butternut squash soup, orzo salad, and chocolate cupcakes topped with a white chocolate spiderweb. The cupcakes were "almost too cute to eat", as they told us. But, hey, what do you expect? I made them, afterall, [;
Along with the chocolate spiderweb cupcakes, we also made other Halloween themed cupcakes. We had a red velvet cupcake with cream cheese frosting. Half was dipped in chocolate sprinkles and had a inverted mini reeses peanutbutter cup and a whopper draped in a disk of white fondant to form a ghost. Next, there was a pumpkin cupcake with a maple cream cheese frosting. They were rolled in orange sprinkles and topped with marzapan pumpkin. Lastly, we made a vanilla cupcake with a caramel buttercream frosting. These were garnished with caramel corn, that I burnt multiple times...whoops!
On November 2, 2010 we catered a lunch for the AP teachers here at the high school. We made a thai green curry, chicken skewers, green salad with ginger sesame dressing, rice, and mocha fudge cakes. The mocha fudge cakes were the favorite, I'm sure, because, once again, I made them.
On November 7, 2010 a few of us catered a wedding reception in Eureka for Tina and Clay. We prepared the apetizers; caramelized onion tarts, curried egg salad bruschetta with smoked salmon, pita chips chipltle hummus, and cheese and vegetable platters. We also made the wedding cakes which was a lemon chiffon cake filled with lemon cream and rasberry. The bottom layer was framed with the silhouette from Mystery Science Theater 3000 and the top tier of the cake was topped with the Myster Science Theater 3000 robots. Tina and Clay were very nice and friendly, and appreicated our work so much.
